Spring is in the air! And I wanted to show you all a quick little salad inspired by a delicious open-faced bagel from The General Muir – The Avenue A (an open-faced bagel smeared with cream cheese and topped with nova lox, avocado, white grapefruit, cucumber, red onion, and dill).
For my version, I topped cold-smoked salmon with pink grapefruit segments, shaved fennel, cucumber, and shallots. Diced cubes of avocado would have been a perfect finish, but unfortunately, my avocados were hard as rocks! This little salad was delicious just by itself, but would have been equally delicious on a bagel, just like the Avenue A.
I had never thought of pairing grapefruit and salmon together, but it is genius, my friends! I really love how the bright and slightly bitter grapefruit really balanced out the salty richness of the smoked salmon. Yum!
Smoked Salmon with Grapefruit, Fennel, and Cucumber
Pink grapefruit (supreme and cut into small pieces)
Cucumber, sliced very thin
Shallots, sliced very thin
Fennel bulb, sliced very thin
Lay smoked salmon in a single layer on your serving plate (or a bagel spread with cream cheese). Top with grapefruit pieces, cucumber slices, shallots, and fennel. Squeeze a little bit of lemon juice over the top.
